The Producer:
This Orange Bourbon comes from Edinson Argote’s careful cultivation on the slopes of Huila, Colombia. At 1750 MASL the varietal ripens slowly, building sugar and acidity before it ever sees a processing tank. What sets this lot apart is the thermal shock step in its washed process, a cutting-edge technique that gently reshapes flavor while preserving clarity.
Thermal shock is more than a name. It involves exposing coffee cherries or beans to rapid temperature shifts after fermentation and washing. A hot phase briefly opens microscopic pores in the parchment and seed, then a cold phase quickly contracts them, helping lock volatile aromatics and subtle acids into the bean before drying.
This method draws on controlled temperature to influence microbial activity and chemical interactions during processing. By altering how sugars, acids, and aromatic precursors move within the bean, thermal shock enhances sweetness, boosts expressive acidity, and tightens structure.
