The Producer:
Rodin Villatoro is a fourth-generation coffee producer from Huehuetenango, Guatemala, carrying forward a rich family legacy rooted in specialty coffee cultivation. Born into the renowned Villatoro coffee family, Rodin grew up immersed in farm life and has since brought a new level of technical expertise and innovation to his family’s estates.
He holds university degrees in agronomy, agriculture, and forestry from the University of San Carlos in Huehuetenango. This academic foundation informs his modern, science-driven approach to coffee farming and processing, blending technical precision with a deep respect for tradition.
As part of the next generation of Guatemalan producers, Rodin is known for his attention to detail, quality focus, and curiosity in the cup. He maintains close relationships with specialty roasters around the world while remaining deeply committed to sustainable practices and his local community.
This microlot features Bourbon, a classic heirloom variety prized for its balance, sweetness, and elegant structure. Grown at high elevations in Huehuetenango, the coffee benefits from volcanic soils, dramatic mountain terrain, and slow cherry maturation, all of which contribute to dense beans and layered flavor development.
Rodin uses a double washed process to highlight clarity and precision. Ripe cherries are hand-picked, depulped, and fermented before being thoroughly rinsed and washed a second time. This careful processing removes remaining mucilage and results in a clean, transparent expression of the coffee’s terroir.
In the cup, this Bourbon lot is refined and approachable, with rich sweetness, chocolate-forward depth, and a smooth, creamy mouthfeel. The structure is clean and balanced, allowing the inherent qualities of the variety and origin to shine.
