Milán is where several of our most distinctive lots come from, and the farm is known for its experimental protocols. The nitrogen-assisted anaerobic ferment behind our Nitro Caturra displaces oxygen with food-grade nitrogen to slow and direct microbial activity, developing esters and sweetness while suppressing sharp acidity. The Logan culturing protocol behind our Loganberry inoculates depulped cherry with native microorganisms and a fruit culture, then runs over 120 hours under controlled temperature.
Both are monitored for temperature, pH and time rather than run on a clock.
