Yellow Caturra is Caturra with yellow fruit. The agronomy is the same: compact tree, high yield, no rust resistance, hungry for inputs.
The difference that matters is at harvest. A red cherry announces ripeness clearly. A yellow one goes from underripe to overripe through a narrower band of color, so pickers need more training and more passes to get it right.
Growers who keep it usually say it carries a little more sweetness and a softer acidity than the red. Whether that survives into the cup depends almost entirely on whether the picking was disciplined.
