The Gemechu Site draws cherry from smallholder farmers working land at around 1,800 meters, where cool nights and fertile volcanic soils slow the fruit's development and concentrate its sugars. Mixed heirloom varieties, the kind that have never needed a formal name because they've simply always been here, are picked selectively at peak ripeness and laid on raised drying beds to dry whole. No depulping, no shortcuts. The fruit does the work. To ensure even drying, our team turns the cherries every hour and covers them with shade between 12–3 PM daily to protect them from direct sunlight. When the cherries reach a moisture level of 10–11%, they are sealed in GrainPro bags to enhance and preserve their aroma.
