The Producer:

Hailing from Huila, Colombia, Edinson Argote is part of a new generation of producers blending traditional cultivation with creative processing methods that redefine what Colombian coffee can be. His work is marked by curiosity, care, and an adventurous spirit that seeks to push flavor boundaries while honoring the land that sustains it.

This unique lot showcases Edinson’s experimental approach, a Peach Co-Ferment where ripe coffee cherries are combined with fresh peaches during fermentation. The result is a beautiful harmony of fruit expression and terroir, crafted with precision from start to finish.

After careful handpicking at peak ripeness, the cherries were placed into sealed tanks with peach pulp to undergo anaerobic fermentation. This stage allows the sugars and natural yeasts from both the coffee and fruit to interact, deepening complexity and layering the profile with stone fruit sweetness. Following fermentation, the coffee was washed and slow-dried on raised beds to preserve clarity and balance.

The cup opens with bright, juicy notes, rounded by delicate florals and a clean, syrupy finish. It is expressive, joyful, and deeply memorable, a reflection of Edinson’s innovative craftsmanship and Colombia’s dynamic coffee culture.
