Paola Trujillo
Paola Trujillo grew up on her family’s farm, Patio Bonito, nestled in the hills of Caldono, Cauca. For over forty years, her father, Don Carlos Trujillo, has cultivated coffee with a deep commitment to sustainable agriculture. Building on his legacy, Paola brings a new dimension to the work—leading fermentation and processing with remarkable precision and care.
This particular lot, a rare Wush Wush variety, is a perfect expression of her dedication. Paola carefully guided the coffee through carbonic maceration at a controlled temperature before washing, an approach that highlights her focus on both innovation and excellence.
After being harvested at peak ripeness, the cherries underwent 24 hours of aerobic fermentation, followed by 50 hours of anaerobic fermentation inside GrainPro bags, with CO₂ added to shape the environment and flavor development. Once fermentation was complete, the cherries were pulped, gently washed, and set to dry on raised beds under careful supervision.
The result is a stunning representation of the Wush Wush variety: floral, citrusy, and elegant. Its honey-like sweetness and vibrant clarity speak to its Ethiopian lineage, yet the depth and balance remind us unmistakably of Colombian terroir.
This coffee captures both Paola’s technical mastery and her passion for preserving and elevating her family’s legacy- one exceptional cup at a time.
